Add the powdered walnuts, chopped plums, saffron, barberry, remaining pomegranate paste, cucumber juice, salt, pepper, and ginger to the ingredients and stir well until completely combined. Remove from heat and let cool.
Pour the filling into the chicken's belly and sew the top with cooking thread so that the filling doesn't leak out while cooking.
Transfer the chicken to a baking dish, pour a little water over it so that it does not dry out during cooking. Bake in a preheated oven at 180°C for 90 minutes until cooked through. Open the oven door every 15 minutes and check the chicken to make sure it is not dry.
Cut the potatoes into cubes. Pour oil into a pan and fry them. Fry the tomatoes, a little hot onion and barberry together and add to the potatoes. Use this mixture for the chorizo.
You can save some of the marinade and pour it over the chicken while cooking to make the food taste better and more delicious. This will also prevent the chicken from drying out.
