One of the most famous traditional soups in Yazd is Sholi soup, which is usually cooked on Yalda night. This soup is prepared in two types: summer (with lentils and beets) and winter (with mung beans and turnips). This soup is usually served with vinegar, but you can also eat it with pomegranate paste.   • 1 and 1/2 cup flour
  • 1 Lentil glass
  • 2 tablespoon dried mint

  • 5 Kilogram of vegetables (spinach, dill, leek, parsley and a little fenugreek)

  • Vinegar and oil as needed

Recipe

First stage

Wash the vegetables well and let them dry. Then chop them finely. Peel the beetroot and cut it into slices. Put the beetroot in a pot with 2 cups of water and put on heat until half cooked.

Second stage

After the beetroot is half cooked, add the lentils and chopped greens to the pot. Pour oil in a small pan and let it heat. Finely chop the onion and fry it in the pan with a little turmeric. Then set it aside and prepare the hot mint in the same way.

Third stage

After the beets and lentils are cooked well, add 1/2 cup of the hot onion and another cup of boiling water to the soup and stir. Dissolve the flour in a cup of water and gradually add it to the pot. Stir the soup well so that the flour does not form lumps.

Step Four

Remove 2 tablespoons of the hot onion and add the remaining hot onion to the soup along with vinegar, hot mint, and salt. Wait for the soup to simmer for a few more minutes, then garnish with hot onion and hot mint and serve.

Important tips and tricks

If your soup is too thin, add more boiling water.

You can use pomegranate paste instead of vinegar according to your taste.
