Tarkhineh soup is one of the most popular Iranian soups, and each city has its own recipe. Wheat or barley bulgur is cooked in sour buttermilk or soaked in it for 10 days, which is how tarkhineh is obtained. Tarkhineh soup with rumen is one of the most popular dishes in Markazi province and Arak city. This soup is very suitable for colds because it has natural antibiotics.

  • 2 tarragon
  • 1 onion
  • 2 1 cup chopped vegetable soup (leek, spring onion, parsley, and coriander)
  • 2 A cup of chopped parsley
  • Dried mint as needed
  • Turmeric, salt and pepper as needed
  • Oil as needed

Recipe

First stage

Wash and clean the sirabee in advance. Chop it to the desired size. In a pot, put the sirabee on the heat with some water, turmeric, salt and pepper and cook well. Place the tarkhineh in water for at least 1 hour in advance to soak them. Chop the onions into small pieces. Pour some oil in a pot and place on low heat. Wait a little until the oil is hot, then add the onions and stir until they become transparent. Add some turmeric, salt and pepper and fry until the rawness of the spices is removed. Add the tarkhineh to the hot onions with some water and let it boil.

Second stage

After the soup has boiled for a while, add the cooked syrup and let the ingredients cook well together. Finally, add the vegetables and let it cook on high heat for at least another 20 minutes.

Third stage

Pour oil into a pan and place over low heat, then add turmeric and let it heat up. Then add dried mint and fry for a few minutes until its color changes. After the soup is cooked, remove it from the heat and pour it into the desired serving dish, then garnish it with hot mint.

Important tips and tricks

If desired, in addition to hot mint, you can also garnish the soup with curd, hot onion, and hot garlic.

This soup can be helpful for pregnant women who suffer from severe thirst.

You can use a blender to blend the ingredients well after the soup is cooked.
