Step 1: Prepare the meatball ingredients
- Peel the carrots and chop them into small pieces. Then pour water into a pot and bring to a boil. Cook the carrots for 10 to 15 minutes until soft. Then drain the cooked carrots and grate them using a grater.

- Add the tomato paste to the onion and sauté for 2 to 3 minutes until the paste turns light in color.
- Add water, sugar, lemon juice, salt, and black pepper to the tomato paste and stir to combine.
- Add the brewed saffron to the sauce and mix.

- Reduce heat to low, cover pot, and simmer for 20 to 25 minutes until meatballs are cooked in sauce and sauce thickens.

- After cooking, transfer the carrot meatballs along with their sauce to the desired dish.
- For additional garnish, you can use freshly chopped parsley, sliced almonds, sliced pistachios, or a little barberry.
