To prepare Isfahani sumac soup, you must first soak the rice and then boil it a little.
Place the sumac in water for about 1 hour to soak well.
Clean and wash the vegetables thoroughly, then chop them. The smaller the vegetables, the better.
When the rice in the pot is cooked and slightly soft, add the chopped vegetables to the pot.
Mix the minced meat well with salt, pepper, and turmeric.
Form the meat into small meatballs the size of a walnut.
Fry the small meatballs in oil and then add them to the soup until the meatballs are well cooked.
Pass the soaked sumac through a cloth strainer and squeeze until the beautiful red sumac juice comes out.
Pour the sumac juice into the soup.
Chop and fry the onion.
Add half of the hot onion to the soup and allow it to boil well and settle.
Pour the soup into a serving dish, garnish with the remaining hot onion and, if desired, hot mint, and serve.
